Ingredients
- 60 g parmesan cheese, cut into pieces
- 30 g pecorino
- 30 g shallots
- 150 g bacon cubes
- 20 g extra virgin olive oil
- 3 eggs (à 60 g)
- 1 egg yolk
- 3/4 tsp salt
- 2 pinches pepper
- 1200 g water
- 350 g spaghetti
Step 1
Place parmesan cheese and pecorino into mixing jar,
S1, 9000RPM 13S; S2
Transfer into a bowl and set aside.
Step 2
Place shallots into mixing jar,
S1, 6000RPM, 5S;
Step 3
Add bacon cubes and extra virgin olive oil,
S1, RVS 50RPM 100C, 1M
Transfer into a big bowl and set aside.
Step 4
Place eggs, egg yolk and grated cheese into mixing jar,
S1, 4200RPM, 18S; S2
Take out egg mixture into the bowl with bacon. No need to clean mixing jar.
Step 5
Place water and 1/2 tsp salt into mixing jar,
S1, 100C, 10M;
Step 6
Place spaghetti through lid opening into mixing jar,
S1, RVS 50RPM 100C, 12M. S3
Drain spaghetti in Steamer dish and transfer into the bowl with bacon-egg mixture. Mix well, season to taste and serve immediately.
