Ingredients
- 200 g parmesan cheese, cut into pieces
Pasta
- 300 g flour
- 70 g spinach, fresh, leaves only, dried
- 2 eggs (à 60 g)
- 1 tbsp extra virgin olive oil
Bolognese sauce
- 800 g meat (half pork, half beef), cut into pieces (3 x 3 cm)
- 200 g mixed vegetables (celery stalk, carrot, onion), cut into pieces
- 60 g extra virgin olive oil
- 100 g white wine, dry
- 300 g crushed tomatoes
- 1-1 1/2 tsp salt
- 1/2-1 tsp pepper
Béchamel
- 1000 g milk
- 80 g butter, soft, plus some extra for the top
- 120 g flour
- 1/2 tsp salt
- 1-2 pinches nutmeg
Step 1- Dough
Place parmesan cheese into mixing jar
S1, 10000RPM, 18S, S2;
Transfer into a bowl and set aside.
Step 2
Place flour and spinach leaves into mixing jar,
S1, 9000RPM, 23S;
Step 3
Add eggs and extra virgin olive oil, knead
S1, Kneading program 5M, S2
Transfer pasta dough into a bowl, cover and let rest for 15 minutes.
Step 4- Bolognese sauce
Place meat into mixing bowl,
S1, 7000RPM, 55S, S2
Transfer into a bowl and set aside.
Step 5
Place vegetables into mixing jar,
S1, 7500RPM, 8S;
Step 6
Add extra virgin olive
S1, RVS 50RPM +/- 120C, 1M;
Step 7
Add minced meat,
S1, 150RPM, 120C, 5M;
Step 8
Add white wine,
S1, 150RPM, 120C, 5M;
Step 9
Add crushed tomatoes, salt and pepper,
Step 10- Combine Béchamel
Place all ingredients of Béchamel into mixing jar,
S1, RVS300RPM10S, RVS 150RPM, 100C, 12M; S3
Step 11
While cooking, roll out dough onto a floured surface to thin rectangular sheets (12 sheets each 20 x 10 cm) with a rolling pin or pasta machine.
While cooking, pre-cook pasta sheets into pot with boiling salted water for about 5 minutes, drain in Steamer dish and place pasta sheets next to each other onto a kitchen towel.
Step 12
Preheat oven to 180°C.
Step 13
Lightly butter a casserole dish, cover the base with a thin layer of Bolognese sauce.
Step 14
Place a layer of pasta sheets over the sauce, cover with another layer of Bolognese sauce, sprinkle some parmesan cheese on top . Repeat this step until all ingredients are used. Finish with sprinkle with some parmesan cheese and spread some small butter cubes on top. Cook in a preheated oven at 180°C for 20 - 30 minutes. Cut lasagne into squares and serve hot.
