Ingredients
Cake
- 280 g sugar 280
- 1 orange peel from 1 organic orange
- 400 g carrots, cut into pieces
- 4 eggs
- 240 g sunflower oil
- 250 g flour
- 2 level tsp baking soda
- 2 level tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg, ground
- 1/4 tsp salt
Frosting
- 50 g sugar
- 80 g white chocolate, cut into pieces
- 50 g butter, soft
- 300 g cream cheese (min. 11 % fat), white
- 30 g orange juice from the organic orange
Step 1
Preheat oven to 180C.
Step 2
Place sugar into mixing jar,

Transfer into a bowl and set aside.
Step 3
Place carrots and orange peel into mixing jar,
S1, 5500RPM, 8S, S2;
Transfer into a bowl and set aside.55008
Step 4
Place eggs, sugar-orange and sunflower oil into mixing jar,
S1, 5500RPM 45S;
Step 5
Add grated carrots,
S1, RVS1500RPM, 20S;
Step 6
Add flour, baking soda, baking powder, cinnamon, nutmeg and salt,
S1, 6200RPM, 5S, S2;
Step 7
Pour mixture into a buttered, floured baking pan (30 x 24 x 6 cm), bake in preheated oven at 180C for 30-35 minutes. Allow to cool in pan for 20 minutes, transfer to cooling rack. Clean mixing bowl.
Step 8
Place white chocolate into mixing bowl,

Step 9
Add butter,

Step 10
Add cream cheese. , orange juice and icing sugar,
S1, RSV 350RPM,45S,S3;
Spread frosting on cooled cake, chill 15 min in refrigerator
